Milk is collected from happy, freely-grazed A2 desi cows only after their calves are fed — respecting the natural bond.
Fresh A2 milk is set into curd overnight using traditional starter cultures — slow, natural, and full of probiotics.
The curd is slow-churned with a wooden bilona in both directions to separate pure golden butter — a labour of love, not machinery.
Butter is simmered on a low flame in clay pots until pure liquid gold remains — clarified to aromatic perfection.
A2 ghee comes from cows that produce only the A2 beta-casein protein in their milk — unlike commercial breeds that produce A1 protein, which many people find hard to digest.
Indigenous Indian breeds like Gir, Sahiwal, and Tharparkar are naturally A2 cows. Their milk — and the ghee made from it — is closer to what the Ayurvedic tradition has celebrated for millennia.
